Utah Wedding Catering Services: Event Review! Josh and Marabella’s Wedding Reception

When it comes to Utah Wedding Catering Services, we love doing ethnic foods. It’s always fun to see a bride and groom branch out a little and be creative with their menu. Josh and Marabella did just that. Marabella is from Mexico and she wanted her friends and family to feel right at home with a traditional menu using the foods from her childhood.

When having a Mexican menu, you have to start off with chips and salsa. So naturally each table had fresh salsa and chips all night long. The main dish was of course TACOS! You can’t have a Mexican menu and Utah Wedding Catering Services without tacos! We provided traditional shredded barbacoa beef and seasoned chicken along with both corn and flour tortillas. And the tortillas must be warm, right?! Yep, we kept them warm and fresh all night long in a warmed chafing dish.

Along with tacos, of course there were refried beans and rice. For the perfect Mexican menu, you can’t forget the beans and rice! To accompany the tacos, there was fresh pico de gallo and lime wedges. We also provided a fresh-cut green salad with dressings and fresh-cut fruit. It was such a gorgeous buffet. For beverages, the bride wanted something sweet and fresh, so we did a coconut limeade. It was a huge hit! We used coconut milk, cream of coconut and fresh limes. It was refreshing! That drink might become a regular on our menus.

Josh and Marabella, thank you so much for choosing Rockwell Catering for your Utah Wedding Catering Services reception! It was so fun to get to know you and your families. We hope you guys live a life of love, prosperity and FUN! We also hope you will consider Rockwell Catering for any future events or Utah Wedding Catering Services!
