As a Utah catering company, we have been in business for 10 years. In fact, this year is our 10th anniversary! As the years have gone on, there has definitely been trends in what types of food people want at their event. But there is one of type of food that never goes out of style: BARBECUE! And we know a thing or two as a barbecue caterer.

Flavor

Let’s get down to the science of where flavor comes from. If you think of your favorite barbecue offerings, you are probably thinking pork and beef. Chicken or turkey aren’t high on the list, right? This is because they don’t have a lot of fat and fat means flavor. Part of doing barbecue is exploiting the fat in meat. And when you work with high-fat meats, like pork and beef, you can get incredible flavor. Now use the fattiest cuts of pork and beef, like ribs, brisket, belly and shoulder, and you have the best combination of flavor and fat. Part of barbecue is adding smoke and char. Those two things help bring out even more flavor. As a barbecue caterer, we like to use both a grill and a smoker to add as much complexity to our meats as possible.

Tenderness

Flavor is nothing unless it’s tender. And the best way to get tender is the classic phrase of “low and slow”. Afterall, aren’t the best things in life worth waiting for? When we start down the road of tenderness, we usually begin in either the early morning hours or let things go all night long. Yes, that means we are babysitting meat all night long. It is worth it! If you cook things slowly, the fat melts better into the meat and the tough meat breaks down into something fall-apart tender. Value
